I am also interested in composing for natural instruments but there doesn't seem to be a lot out there. I have begun using Notion for the ipad and it seems to be quite a powerful tool for scoring. It would also be very useful in teaching music. It's loaded with orchestral instruments. Mostly i've been using it to get ideas down when I'm away from my home studio.
